SPICY APPLE PANCAKES

2 quarts of apple slices (1/4-3/8" thick), peeled
1/2 cup of pancake syrup
2 tablespoon of butter
1 1/2 cup of biscuit mix
1 cup of milk
2 eggs
1 tablespoon of melted or liquid shortening
1/2 teaspoon of cinnamon
1/4 teaspoon of nutmeg

Combine apples in skillet with syrup and butter. Cook until tender but firm (25 minutes). Meanwhile combine rest of ingredients and mix until smooth. Remove apples from skillet with slotted spoon and add to batter. Fold gently until apples covered. Lift battered covered apples onto lightly greased, hot griddle. Grill until edges cooked. Turn pancakes once. Serve with remaining syrup in which apples were cooled.
