

| Low Calorie Potato Pancakes

6 tablespoons of Egg Beaters 3 cup of cubed raw potatoes 1/2 cup of coarsely chopped onion 1/4 cup of all purpose flour 1/8 teaspoon of ground white pepper 2 tablespoons of regular or sweet unsalted margarine Applesauce (opt.) |

Place Egg Beaters in blender container; add potatoes, onion, flour and pepper. Blend until cubes are well grated and the mixture is evenly rough in consistency. Melt 1 teaspoon margarine on hot griddle for every 2 pancakes. For each pancake, pour 1/4 cup batter onto hot griddle. Fry on both sides until well browned, about 3 minutes per side. Serve hot with applesauce, if desired. Makes 1 dozen pancakes. 6 servings. |
