Low Calorie Canyon Ranch Bread Pudding

6 slices whole wheat bread 2 cups of evaporated skimmed milk (use water to make full 2 cups) 2 tablespoons of margarine, melted 6 egg whites (or equivalent in "Egg Beaters") 1/3 cup of Fructose 1 tablespoon of vanilla 1 teaspoon of cinnamon 1/4 cup of raisins |

Crumble bread into milk let soak a few minutes. Whisk egg whites until frothy. Combine all ingredients, mix well and spoon into 6 large muffin tins that have been sprayed with Pam. Bake at 350ºF. for 30 minutes. 215 cal/ 5gr. fat. These are good for breakfast as well as dessert. |
